Quick, easy, tasty, healthy. This dish uses Isernios chicken breakfast sausage that is much more healthy than any pork sausage and actually tastes really good. Of course if you prefer another, use whatever chicken sausage you want. So this dish can be made in about 8 minutes. By the way, the yellow tomatoes in the picture look like a quail egg yolk or something. It’s actually just a tomato in case you are wondering. But sunny side up eggs is also an option here so feel free to go that route if you want. You want scrambled eggs? Get crazy and go scrambled you wild thing! Easy to make egg breakfast with a much healthier choice of chicken breakfast sausage over traditional pork sausage.
- 2 eggs
- 8 cherry tomatoes
- 1/4 cup chicken breakfast sausage
- 2 tbsp goat cheese
- 2 tbsp diced green onions
- 1 to taste salt and pepper
You start out by cooking up some sausage in a pan with diced green onions and some grape or cherry tomatoes (I used an heirloom medley for this dish in the picture). Medley…totally underused word by the way. Use it more often and thank me later. Back to the recipe though. If you don’t have these types of tomatoes just use regular tomatoes. Cook the sausage until it’s fully cooked, tomatoes are nice and roasted and then remove the sausage and tomato mixture and put it off to the side. I like to use a little bit of the grease from the pan to fry my eggs in for extra flavor. Fry them up, toss it on a plate and top with the sausage and tomato mixture Sprinkle some goat cheese on top and you are good to go. If you want a little sauce, mix up a little sour cream and chipotle adobo sauce to give this dish some heat and extra flavor.
