Poached Eggs with Crispy Potatoes, Black Beans, Goat Cheese & Chipotle Cream Sauce
This is a great little breakfast dish that will impress whoever you are cooking for and it’s pretty easy to make. The combination of ingredients are great but what really makes this dish stand out is the Chipotle cream sauce.
- 5-6 Yukon gold baby potatoes
- 1 can of black beans
- 2 green onions
- 4 fresh eggs Goat cheese
- 1/4 of a tomato
- 2 tbsp of sour cream
- 1 tsp of sauce from a can of Chipotle chiles in Adobo sauce
- 1 ounce of milk salt Pepper
Start out by heating up water in a pan so you can poach your eggs. If you’ve never poached eggs before, here is a YouTube video of how to poach eggs. http://www.youtube.com/watch?v=XB3sUY0gZr4. Throw a large skillet on an as well over medium heat and add a tablespoon of olive oil. Slice up the potatoes in 1/4 slices. After your oil and pan is hot, add in the potatoes and cover. At this time you should start poaching your eggs. It’s important not to overcook your eggs as you really want the yolk to ooze out after it’s been cut into. While your eggs are cooking heat up a can of black beans. Now you can start on the chipotle cream sauce. Open up your can of chipotle chilis and mix your sour cream, milk, salt, pepper and the adobo sauce. Mix until it’s creamy and has the consistency of something like alfredo sauce. If it comes out too thick, add some more milk. If it comes out too thin or too spicy for your taste, add some more sour cream. Be careful with the adobo sauce as it can be fiery. In the mean time you should be watching your potatoes and eggs. The potatoes should be nice and crispy so make sure to cook both sides and season with cracked pepper and salt.
After everything is cooked, put the black beans (don’t use juice, just the black beans) on a plate and top with potatoes. Take some goat cheese and crumble over the top. Next sprinkle finely chopped up green onions over the top. Next add the poached eggs on top and top the whole plate with the chipotle cream sauce. Finish by adding finely diced tomatoes over the top of the eggs , serve up and if you have fresh avocados, serve up some slices on the side for a perfect finish.
